Tomato Basil Soup
This soup will become a staple in your life. The fresh flavors just pop! As much as I love the convience of canned tomatoes, nothing beats the taste of the fresh stuff. Its really a treat all on its own, but I gotta say, this soup will pair will pair well with Green Chile Mac and Cheese 2.0!
The fresh tomatoes and basil give this this soup that bright freshness. Its such a great soup to help beat the Winter funk, we are getting into Spring now! I could probably have this forever and ever!
Tomato Basil Soup
Serves 4
- 3 lbs tomatoes
- Handful basil
- 2 tbsp brown sugar
- Olive oil
- Red chili flakes
- Salt and pepper
Preheat oven to 375 F
Half all the tomatoes and brush olive oil and sprinkle with salt
Bake face up in the oven for 30mins
Add 1 tsp of oil into the pot and heat with red chili pepper, taking care not to burn the peppers
While the pot is heating, peel the tomato skins off, it helps with the texture of the soup
Add the peeled tomatoes into the pot
Use an immersion blender to blend the tomatoes until you reach a consistency you like
Chop the basil finely
Add brown sugar and when the tomatoes reach a soft boil, add in the basil
Let simmer for ~15 mins to let the flavors combine
Season with salt and pepper to taste
