Power Bowl: Farro Edition

Power bowls are my go-to for meals. Its simply a wholesome meal that you can mix and match to your preferences. Farro is one of my absolute favorite grains. I like the bite and the heartiness that it provides. It is the star of this power bowl. 

I get my farro from Trader Joe's. It cooks quite fast because it is a pre-cooked package. You might need to account for a longer cooking time if you cook from dry. 

If you have access to herbs, I find adding them in is a great way to boost the flavor profile of the dish. Since rosemary is the one plant thrives in the backyard, I decided to go with rosemary. I threw in the broccoli to add a pop of color and to sneak in more veggies. 

I wrote this in the way that makes the most time sense to me. Please feel free to mix around the order if you have found a more efficient method. P.S. Dont forget to share it with me!

Power Bowl: Farro Edition

Serves 5

  • 2 8.8oz packets of pre-cooked farro
  • 2 sprigs rosemary
  • 1 crown broccoli
  • 2 blocks tofu
  • 3 tbsp flour
  • Red chili flakes
  • 1 crown cauliflower
  • 1tsp chili powder
  • 1 package of frozen fire roasted corn

Start by pressing the tofu between 2 plates, draining intermittently

Preheat the oven to 350 F

Cook the farro according to the directions on the package, drain

Fine chop the broccoli and rosemary, set aside 

Wash and prep the cauliflower

In a bowl, toss with light coating of olive oil and chili powder

Spread the cauliflower onto a tray and bake for 20 mins

In a small pot, add fire roasted corn and 1 tbsp water and heat on low

In a pan, heat up 2 tsp oil, add the broccoli and rosemary and cook until fragrant, stir in the farro

In a dry bowl, mix the flour, salt, pepper, and red chili flakes

Slice your tofu in half so you end up with two sheets of tofu, keep it stacked and then split into 4, cut each of the 4 rectangles in half diagonally so you end up with triangles. For reference, each block of tofu will yield 16 triangles

Coat each of the tofu pieces in the flour mixture

Heat a generous amount of oil in a pan and wait until the oil sizzles when you drop a bit of flour into the pan

Place the tofu triangles into the pan and let each side cook until you obtain a nice crispy golden brown

Serve in a bowl with a bit of everything!
