Crispy Gnocchi
I only discovered gnocchi about a year ago. Since then, I’ve seen it as this magical food that is so delicious and has the power to transform simple ingredients into the perfect bright dish.
The only gnocchi that I’ve really had the experience cooking with is the one from Trader Joe’s. The packaged potato pillows of perfection are simply too easy to work with.
I’ll take you through one of my absolute favorites from last year. Then show you how easy it is to change it up to whatever you feel like.
Crispy Gnocchi
Potato Gnocchi
1 handful fresh basil, sliced into ribbons
1 whole lemon
Red chili flakes (optional)
Salt and pepper
Take olive oil or vegan butter and heat in the pan until hot
Add red chili flakes in to get that heat, taking care not to let the chili burn, this step is optional
Add in the gnocchi straight from the package, no extra steps are needed
Let it sit in the pan until it gets golden brown and crispy, then flip
Once the gnocchi is the golden brown to your liking, squeeze in lemon juice and stir in the basil ribbons
Finish off with salt and pepper

So really, the basis of this recipe is to get the gnocchi nice and crisp. After, you can really just set the gnocchi aside. Using the same pan, you can mix together some really amazing combinations. I did the following for a potluck and received rave reviews!

Green bell peppers
Spinach
Broccolini
