Lentil Mushroom Arugula Salad
This salad makes me love arugula! The spice from the arugula compliments the heartiness from the mushrooms and the lentils. This is actually one of the first dishes that I made for my family. It was such a confidence boost when everyone ate it up! Even better when it got requested 2 days later!!
I love this salad because it is so full of flavor and so capable of filling you up!
Lentil Mushroom Arugula Salad
Serves 5
- 1 lb whole mushrooms
- 1 lb cooked lentils
- 1 big spoon of capers, chopped
- 1 bunch parsley, chopped
- Red chili flakes
- Salt and pepper
- 1 bag (7oz) arugula
- 1 lemon
Prep and slice mushrooms evenly, not too thin so you get some bite
Oil and heat the pan
Add in the red chili flakes if you like the spice, taking care not to let the chili burn
Cook the mushrooms down
Add in the cooked lentils and chopped capers
Stir in the chopped parsley
Season to taste with salt and pepper
When slightly cooled, squeeze the lemon juice onto the mixture. Start with half a lemon then taste
Add the lentil mushroom mixture to a bed of arugula and serve immediately
Cooking Notes:
This is a good dish to take to a potluck, just do it flip side. Lentils and mushrooms on the bottom and then spread the arugula over the top. Just remember to combine together before everyone starts eating!
