Mini Burgers
The ultimate summer lunch-piration! This mini burger is the cutest way to eat from all the food groups. Pair with oven-baked fries and you're good to go!
I decided to try making patties on my own after much hesitation. I am really glad I had since I've already made it 3 times since. I have played around with the recipe and want to encourage you to swap out ingredients to fit you!
Patty Ingredients
Makes ~32 Patties
Olive oil for cooking
Salt and pepper
1 cup chopped broccoli
1 cup chopped mushrooms
1/2 cup chopped jalapeños (optional)
1 cup cooked barley
3/4 cup cooked chickpeas
3/4 cup cooked black beans
1/2 cup chopped parsley
1/2 cup chopped walnuts
3 tsp turmeric
3 tsp Italian seasoning
3 tsp salt and pepper
1/2 cup breadcrumbs + more for coating
2 eggs
Heat pan with oil and cook the vegetables until soften
Mash the beans with a fork or potato masher
Stir in all the ingredients (except the egg) until well mixed
Salt and pepper to taste
Mix in the eggs well
Form the patties by taking a scoop into your hand and shape
Coat the patty with the breadcrumbs
~Baking Method~
Line onto a coated baking tray
Add another coat of oil to the top of the patties
Bake in the pre-heated oven for 375 F for 25 mins
This method freezes well for future use
~Pan Fry Method~
Heat skillet with oil
Place patties into the skillet without overcrowding it
Cook each side until golden brown
