Green Chile Mac and "Cheese"
This cheesy sauce will change your perspective on vegan cheese. It tastes like queso and I almost went to get chips to eat with this. I might do a whole thing on queso dip later on! The green chilies add in the biggest flavor punch. Its got to be my current favorite addition to food. You can just count on it making your dish 10/10.
I'm fairly new to trying vegan cheeses and I'm really happy to have found such a yummy alternative! I like that you make it instead of buying it packaged from the store! I like being able to adjust the taste since I still am new to vegan cheese.
Let's get started to take on the classic comfort food!
Green Chile Mac and "Cheese"
Serves 5
- 1 pound of macaroni pasta
- 1.5 cup raw unsalted cashews soaked
- 2 cups water
- 1 tbsp corn starch
- 1 tsp cumin
- 1 tsp chili powder
- 1/4 cup nutritional yeast
- 1 container of green chilies, divided
Boil the dry pasta according to the package instructions
In a blender, add in the cashews, water, corn starch, cumin, chili powder, nutritional yeast, and one scoop of green chilies
Blend until smooth
Pour into a pot and stay to stir, the sauce should thick as soon as the heat comes through
Smooth out any lumps
Taste the sauce again to make sure it is to your liking, adjust with cumin, nutritional yeast, green chilies, salt and pepper
Pour the cheesy sauce over the noodles and another scoop of the green chilies
Stir to combine well
Cooking Notes:
I didn't specify how much green chilie to use because it really would depend on your taste. I also really like Trader Joe's frozen bag of chilie and use it generously
